Pasta with pumpkin and nduja

Today we offer you a simple and quick first course to prepare, excellent for those who love strong and spicy flavors such as Calabrian nduja.

Pasta with pumpkin and nduja, ingredients for 4 people

  • 500g of pumpkin
  • 400g of spaghetti
  • 1 clove of garlic
  • 1 tablespoon of Spilinga nduja
  • 1 tablespoon of extra virgin olive oil

How to make pasta with pumpkin and nduja

First clean the pumpkin by removing seeds, filaments and peel. Cut the pumpkin into more or less regular cubes, so that cooking is uniform and fast.

In a pan pour a drizzle of oil and the garlic clove. When the oil is hot, add the pumpkin, a pinch of salt and cover with a lid (it should not be necessary to add water because the pumpkin releases its own during cooking). Cook the pumpkin for about 15 minutes over medium heat.

When the pumpkin is almost cooked, remove the garlic and add the nduja . Stirring with a wooden spoon, let it melt and mix with the pumpkin.

Drain the pasta al dente and pour it into the pan with the pumpkin. Mix the flavors well by adding, if necessary, a little cooking water from the pasta. Serve it hot and enjoy your meal!
